Chicken Madras is a dish that can be found in Indian restaurants throughout the world and for many people it is their choice of top chicken curry recipes. Chicken Madras is from South India and the curry is too hot for a relatively large amount of chilli in the recipe although it may be reduced if necessary when it is too hot for your taste.

pinch coriander power
pinch of ginger powder
pinch of mustard seed
Method
. Fry the chicken in about - tablespoons of vegetable oil in color and remove from pan.
. Add the onion until golden and then add the herbs. Mix the spices and blitz before adding to skillet and cook about minutes adding a little water if necessary.
. Add the chicken and pour the lemon juice. Stir well.
. Chop the tomatoes and stir to mix. Cook on medium heat for minutes.
. Cooking with aa medium oven for minutes and serve with basmati rice.
